cornbread casserole
corn bread vegetables
2 packages corn bread mix
2 cups shredded cheese
1 package of ranch dressing mix
1 cup mayonaise
1 cup of sour cream
2 cans pinto beans (drained)
1 can of corn (drained)
1 can of tomatoes diced (drained)if not using fresh chopped tomatoes
1 onion chopped
1/2 green pepper chopped,1/2 red pepper chopped


fix cornbread according to package, let it cool.
in a large bowl combine all vegetables and mix well
in another medium bowl combine mayonaise, sour cream and the package of ranch dressing mix, mix up well.
in a large casserole dish layer 1/2 of the cornbread crumbled,1/2 the vegetable mix,1/2 the dressing mix, top with 1 cup of shredded cheese repeat the layers.Refrigerate until ready to serve. Best when prepared a few hours ahead of time the flavors have time to combine.
