Quinoa Super Tacos
Protein-packed tacos! A quick, delicious lunch
1/2 Cup uncooked Quinoa
1/2 Can of Refried Beans
3 White Corn Tortillas
1 Roma Tomato
Green Pepper Tabasco
Lettuce (Optional)
Queso Fresco (Optional)
Sour Cream (Optional)

 

Cook Quinoa as instructed on package.
Dice tomato and saute over medium heat for a few minutes until they are soft. Add a few dashes of Green Pepper Tabasco (quantity depending on taste) as you saute the tomatoes. Remove from heat.
Put refried beans in a bowl, cover, and place in microwave for about 2 minutes, stirring once during cooking time.
Use the same pan you used for sauteing the tomatoes and warm to medium heat. Place 1 tortilla at a time in pan and lightly toast both sides. By this time, quinoa should be done.
Spread a layer of refried beans on each tortilla. Next, spoon quinoa on each tortilla. (Note, you will have plenty of quinoa left over to make more or use for something else!) Sprinkle tomatoes over each tortilla, followed by lettuce, sour cream, and queso fresco if you wish.
Makes 3 tacos.
