CURD RICE
A south Indian Rice Preparation
250 grams Rice.
1 liter Curd (Indian Yogurt).
1/4 cup chopped Green Chillies.
One pinch Asafoetida.
1 bunch of small Curry leaves.
1 bunch of Coriander leaves.
6 Red Chillies.
200 ml of Clarified butter (Ghee).
Salt to Taste.
2 spoons Mustered seeds.
100 grams of Cashew Nuts.
250 ml of Milk.

 

Cook the Rice and keep it aside.

To a frying pan add Ghee and heat. Add Asafoetida. Add Cashew nuts and fry. Add Red chillies, mustered seeds and Curry leaves and fry.

Add Curd and Salt and mix thoroughly. Add all the above ingredients and chopped green chillies to this Rice and mix well. Allow to cool. Now add boiled and cooled milk. Mix well again.

Sprinkle finely chopped green corianders over the preparation.

SERVE WITH HOT AND SWEET SAUCE.
