Yellow Squash
Sauteed Squash
6-7 Yellow Squash (Sliced)
1/2 Cup chopped Onion (White, yellow or Red)
1/2 Cup chopped Bell Peppers (Orange, Yellow or Red)
1/4 Cup Mushroom stem & pieces
3 Tbsp Butter
1-2 Cups Canola or Olive Oil

 

Combine all ingredients in a frying pan & cook on medium heat until desired tenderness. I normally stir occasionally until it comes to a boil then I reduce heat & simmer until tender.
Preparation Time: 15 minutes Serves: 6-8
