Simply Delicious Potatoes
Super Easy Potatoes in a Delicious Sauce!
2 1/2 cups diced yukon gold potatoes
1/4 cup dijon mustard
1/2 cup olive oil
2 Tbls. chopped fresh basil

 

Boil the potatoes in salted water for 10-15 minutes or until fork tender.

While these are boiling, blend the mustard, olive oil and basil (in a blender, of course).

Drain the potatoes and let stand for 5 minutes.

Then pour the mustard mixture over the potatoes and gently toss until they are lightly coated.

Serve hot or cold.
