Roast Potatoes
1/2kg small potatoes
1/2 cup olive oil
3cm butter (1 inch for all you non-metric people).
Salt and peprer to taste (sea or rock salt is better for taste)


Cut potatoes 2/3 through with a sharpe knife at 1/4 inch intervals about .75cm.

Add olive oil and butter in a baking tray over a moderate heat on the cooktop.

Add potatoes and baste.

Place tray in hot oven and cook until tender and golden.

Please remember to consume Red wine from Beef roast recipe.
