Old Style Potatoes-French Style
Casserole Style
2 lbs. boiling potatoes
1 medium yellow onion, peeled, chopped
2 Tbls. flour
4 Tbls. olive oil
2 Tbls. chopped parsley
1/4 tsp. ground nutmeg
salt and pepper to taste
grated rind and juice of 1 lemon

 

Peel and cut potatoes into quarters. Parboil for 3 minutes in salted boiling
water and then drain. Mix remaining ingredients, except for lemon juice in a large salad bowl. Place all in a buttered baking dish, and drizzle a bit more oil if desired. Bake at 450 degrees for 20-25 minutes, or until nicely browned and tender. Pour lemon juice over the top just before serving. Keep hot until served!
