Courgettes a la Mode
Delicious Zucchini Dish! |

6-8 courgettes (zucchini), medium size.
6 slices of middle rasher bacon
2 large onions
1-2 cloves garlic
Salt and pepper
Butter and olive oil to cook
|
Remove rind and cut the bacon into bite-size pieces.
Wash, dry, trim and slice the courgettes into 1 centimetre slices.
Peel and thinly slice the onions.
Crush and finely chop the garlic.
Heat the oil and butter in a fairly large pan. Fry the bacon pieces and remove from pan.
Gently cook the onions in bacon-flavoured pan until pale golden.
Add the sliced raw courgettes and cook, stirring gently, until courgettes are tender, adding garlic towards end.
Mix the cooked bacon into the courgette/onion mixture.
Serve immediately while hot.
