Southwestern Low Fat Chicken Soup
A delicious low fat, high protein soup
6 cups fat free chicken broth
1 large boneless/skinless chicken breast
1 small onion
2 cloves of garlic
1 cup of frozen corn
1/2 can of black beans
1/2 cup of brown rice
1 can of diced tomatoes
1 tsp cajun spice
pinch of pepper
1 tsp olive oil


* Brown onion in olive oil until soft.
*Add chopped or minced garlic and heat through.
*Slowly pour in chicken stock.
*When soup is boiling add cut up chicken,tomatoes and rice.
*Simmer for about 20 minutes
*Add 1/2 can of beans with juice
*Add corn
*Simmer for 20 more minutes or until rice is cooked.

**Please note you do not need to add salt to this dish. If you like it spicy, add your favorite heat!
