Sour Cream Potato Soup
Easy and Satisfying
4-5 medium potatoes, peeled, diced
1 medium onion, chopped
1 16 oz. container sour cream
salt and pepper, to taste
4 slices of bacon, cooked, crumbled (optional)


Boil potatoes and onion in lightly salted water for 20-25 minutes. Remove from heat and add the sour cream (DO NOT DRAIN THE WATER). Stir until combined.

Season with Salt and pepper and pour into individual bowls. Top with bacon.

Serve with fresh rye bread.
