Queensland Blue Soup
Australian Soup
2 leeks or large onions
750g Queensland blue pumpkin
250 g potatoes
5 cups of chicken stock
1 cup of cream
salt and white pepper to taste
chopped chives and chopped prawns, to garnish

 

Peel and chop roughly leeks, onions, pumpkin, and potatoes. Place in large saucepan. Add stock. Bring to boil, reduce heat, and simmer until vegetables are really soft. Cool slightly, then puree in processor until smooth. Return to saucepan and stir in cream and seasoning to taste. Serve hot or chilled, garnished with prawns and chives.
