Potato Soup
2 large potatoes, 3/4 inch diced
1 large stalk celery, diced with the leaves
1 medium carrot, grated using large holes on the grater
2 Tbls. butter or margarine
2 Tbls. flour
4 cups water
4 Tbls. milk


In a saucepan melt the butter over medium heat then add the flour and cook until it is a nutty brown color. Keep stirring all the time and do not let it burn.

Using a wisk, slowly add the water so that the mixture is very smooth and has no lumps.

Add the remaining ingredients and salt and pepper to taste.

Bring to a boil, cover, lower heat to medium low and simmer for 30 minutes.

When soup is ready, remove from heat and mix in the milk.
