Jim's Rocky Mountain Chili
Chili and Beans!
1 very large yellow onion, chopped
1/4 cup margarine
2 pounds ground beef, deer, or antelope
1 1/2 Tbls. red chili powder (New Mexico Brand)
1 1/2 Tbls. oregano leaves, chopped
2 Tbls. ground cumin
3 small cloves garlic, crushed and chopped
2 cans Pinto beans
2 ceans red beans or kidney beans
1 can Black Beans
1 can Refried Beans
2 cans diced tomatoes
2 cups dark beer, stout

In a large (4 to 6 quart) metal cooking pot, melt down the margarine and saute the onions and garlic until very limp. Remove from the pan and hold in a bowl.

Brown the meat and towards the end of the browning, add the onions and garlic, and the remainder of the ingredients, except for the refried beans. Place on simmer for at least one hour. Cook down the liquids and add the refried beans about a half hour prior to serving, stirring in very well.

With saltine crackers and your favorite glass of beer, enjoy to your hearts content!
