Haddock and Horseradish Chowder
750g smoked haddock
3 medium potatoes
1 large onion
3 Tbls. horseradish cream
1/2 cup finely chopped parsley
1 Tbls. butter
1-2 cups milk
100g cream
pepper
salt

 

Poach haddock in water for 5 minutes. Drain, remove skin and bones and shred.

Cook 2 potatoes until soft and mash.

Finely dice onion and remaining potato and sautee in butter in stock pot until soft. Add half the milk, haddock, mashed potato and horseradish. Cook for ten minutes on low flame. Use additional milk if necessary.

To finish, add cream(or more milk), parsley, salt, pepper and horseradish to taste.
