Grampa's Cheesy Wild Rice Soup
Extremely Delicious!
One 6-oz package quick-cooking long grain and wild rice mix (with seasoning)
1/2 green pepper, diced finely
4 cups milk
One 10 3/4 oz. can condensed cream of potato soup, undiluted.
8 oz. processed American cheese, cubed
1/2 lb. bacon sliced, cooked crisp and crumbled

 

In a large saucepan, prepare rice and mix according to package directions. Also add the diced green pepper at this time.

When rice and peppers are done, stir in the milk, soup and cheese. Mix well.

Cook on low heat until cheese is melted.

Serve in soup bowls, using the crumbled bacon for garnish.

I also make oven-toasted buttered English Muffin halves to serve along with the soup. Enjoy!
