Cream of Broccoli Soup
3 large stalks broccoli
1 quart chicken broth
1/2 cup diced onions
1/2 cup diced celery
1 pint half and half cream
1/2 cube margarine or butter

 

Slice off the broccoli flowerettes and slice into pieces discarding any tough stalks.

Melt butter in large sauce pan. Add onions and celery and saute for 2 minutes.

Add broccoli and saute for about 1 minute.

Add chicken broth and simmer until broccoli is very tender.
If needed, add enough water to make required amount of soup.

About 10 minutes before serving, add half and half cream and heat over low heat.

Salt and pepper to taste
