Cauliflower Broccoli Soup
1 1/2 to 1 full head of Cauliflower or Broccoli
1 Quart chicken broth (amounts can vary)
2 Tbls. cornstarch
1 cup non-dairy creamer
butter to taste


Cut the vegetables fine and cook with 2 Tablespoons water in the microwave for 8 minutes.

Heat chicken broth, thicken with cornstarch. When it is a thick and nearly clear broth, add the cooked vegetables. Then add non-dairy creamer (can use light cream) and butter. Add salt to taste.

Serve hot!
