Carrot Soup a la Joe
Delicious Low Fat Soup
1/4 cup butter
1 medium onion, sliced
1 clove garlic, finely chopped
5 cups low sodium lowfat chicken stock
3 1/2 cups sliced carrots, 1/4 inch thick
1/4 cup uncooked white rice
1 heaping Tbls. chopped fresh or dry dill (You may substitute parsley)
1/4 tsp. white pepper(suggested)
Salt to taste

 

In a saucepan melt your butter over medium heat.

Saute the onions and garlic until tender about 5 minutes.

Add the chicken stock, carrots and rice. Bring to a boil, lower heat to medium low, cover and simmer for 25 minutes.

When soup is cooked put into a blender about 2 cups at a time and blend until soup is smooth but still has some carrot chunks for texture.

Add the dill and mix well. Check if soup needs salt.

Can be served with croutons if so desired.
