Tropical Delight
Mahi Mahi & Shrimp Main Dish
4 Mahi Mahi fillets
2 tsp. lime juice
4 ounces shelled shrimp
sea salt & pepper

3/4 cup pineapple (chunks)
1/2 cup mango diced(substitute peaches, or nectarines, if you prefer)
1 slice honeydew & cantaloupe melon
1/4 sweet red pepper
1/3 cup lime or lemon juice
1/4 cup chopped cilantro
4 scallions
1/2 to 1 tsp. finely diced jalepeno pepper


Salt and pepper the Mahi Mahi fillets and shrimp. Add lime juice and set aside for ten minutes. Broil 10-12 minutes or bake 20-30 minutes at 350 degrees. Just make sure the Mahi Mahi is firm and not dry.

Mix all other ingredients together in a separate bowl and place in refrigerator until Mahi Mahi and shrimp is done cooking. This can also be done ahead of time, but no more than one day ahead of your planned meal.

Top the Mahi Mahi fillet with the fruit mixture and top with 1/4 of the shrimp.

If you prefer you may also bake the Mahi Mahi & shrimp together with the fruit mixture for a different more intense flavor of the fruit mixture on the fish. When doing this, adding a little coconut milk is recommended.
