Shrimp, Broccoli, and Orzo
Greek Style
1 pound medium sized shrimp, peeled and de-veined
2 1/2 cups chicken broth
1 16oz. can tomatoes, drained and chopped
2oz. feta cheese, crumbled
12oz. broccoli, florets and thin slices
1 cup uncooked orzo
1 tsp. salt
1/4 tsp. pepper
1/3 cup. fresh basil or 2 tsp. dried leaves

 

Bring broth, tomatoes, and broccoli to a boil in a large skillet over high heat. Add orzo, reduce heat, cover and simmer for 8 minutes, stirring occasionally. Add shrimp, salt, and pepper, return to a simmer, cover and cook 4 minutes or until shrimp turns pink and the broccoli and orzo are tender. Remove from heat. Stir in crumbled feta cheese and basil.
