Poached Ocean Trout
1 Ocean Trout
1 cup Fish or Chicken Stock
1/2 cup Fruity white wine
Juice of 1 lemon
1 Medium onion, finely chopped
1 tsp. freshly ground black pepper
1 bay leaf
4 or 5 cloves


Wash fish in cold water and place in a fish bath kettle or baking dish.

Add all the other ingredients and enough water to just cover the fish. Put lid on the kettle or foil of the pan. If in kettle simmer over low heat on top of the stove heat. If in a baking tray cook in oven that is no hotter than 150C.

An average ocean trout will take about 20 mintues to cook.
