Braised Tilapia with Asparagus
One pan, easy 20 minute recipe
3 tsp butter
2 cloves of fresh garlic, chopped
1/2 cup chopped fresh celery
1/2 cup Red wine (I prefer Lambrusco)
Dash of sea salt
Dash of ground peppercorn
1 tsp Dry chopped parsley
2 Tilapia fillets
8-10 stalks of asparagus, canned (If using fresh, steam prior to use)


Melt butter in fry pan on medium heat, add chopped garlic and celery, saute until garlic is golden and celery is slightly transparent. Add wine, sea salt, peppercorn and parsley, stir occasionaly. Cook down wine for about 5 minutes, place fish fillets in pan, searing the outside, then turn over, sear other side. Place asparagus on top, cover and simmer for approx. 10-15 minutes, turning fish every few minutes to ensure thorough cooking.
