Salade de Tomatoes Jefferson
4 Large Tomatoes
1 Medium Onion
4 Tbls Olive Oil
Salt
Pepper

 

My lineage goes back to Peter Jefferson, the father of our third president. One of Thomas Jefferson's recipes was known as Salade de Tomatoes Jefferson and is prepared as follows (very similiar in preparation to cucumber salad):

Disgorge for an hour for large sliced tomatoes in salt (this removes much of the water and juice) .

Dice one medium onion.

Pour four tablespoons of olive oil and vinegar over tomatoes and onions in deep bowl.

Let stand overnight in refrigerator.

Pepper to taste and serve cold.
