Low-Calorie Shrimp Salad
8 oz. Small-curd cottage cheese
1 pound Shrimp; boil, peel, deveined, chopped
2 Eggs, hard cooked, mashed fine
1/2 cup olives; chopped, opt.
1 large Tomato sliced
Salt and pepper
Paprika

 

Mix together cottage cheese and shrimp.

Add eggs, olives, salt and pepper.
Mix well. Sprinkle with paprika for color.

Arrange tomato slices over top of shrimp mixture.
