Huzaren Salade (Dutch Salad)
Spectacular Lunch!
8 pcs. potatoes (firm ones)
250 g cold veal or ham
2 pcs sweet/sour apples, core removed
2 pcs. hard boiled eggs
2 tsp. lemon juice

For the sauce:
1 Tbls. mayonnaise
1 Tbls. yoghurt or soft curd cheese
1/2 Tbls. cider-vinegar
1 tsp. paprika powder

For garnishing:
6 pcs. sour gherkins
4 Tbls. cocktail onions
4 Tbls. peas (from a jar)
6 pcs. eggs from a quail
6 halfs of cherry tomatoes
some lamb's lettuce


Boil the potatoes and let them cool off. Slice the potatoes and cold veal or ham into cubes. Sprinkle the lemon juice on the apples and slice them as well. Mix them together in a bowl. Add the sauce as mentioned in the ingredients. Spread it on a scale and make a little mountain of it. Smooth it with a knife. Garnish with gherkins, peas, cocktail onions, little eggs, cherry tomatoes and the lettuce.
