							Curry chicken salad A unique, sweet & salty treat |

							2 lb cubed chicken breast 1 tbsp light olive oil 1 cup diced red apple 1/4 cup minced yellow onion 1/2 cup mayonnaise 2 tsp mild yellow curry powder 2 green onions, minced 1/2 cup pine nuts or chopped   walnuts 1/4 tsp pepper salt to taste

							  This easy-to-make salad is a great combination of sweet apple and spicy curry. Makes a great meal, or a divine side.  In a non-stick skillet, sautee chicken in olive oil, for about 5-7 minutes. Drain off any liquid.  In a large bowl, mix chicken with all the remaining ingredients. Adjust the salt and curry powder to taste. Serve chilled.
