Cold Somen Noodle Salad
Cold Salad Made with Buckwheat Noodles
1 package dry Somen (buckwheat) noodles
2oz Soy sauce
pepper, to taste
chopped chives
chopped basil
1 Tbls. peanut butter
1oz vegetable or olive oil


Cook noodles until done (about 3 minutes). Drain and rinse in cold water. Set aside in large bowl.

In a second bowl, mix the other ingredients and whisk to blend.

Pour dressing over cold noodles and toss.

Can be served immediately or chilled for later.

WARNING: Noodles may become soggy if left in refrigerator for more than 2 hours.
