Caesar Salad Dressing
40g Anchovies
50g fresh garlic-crushed 140 mls. red wine vinegar
6 egg yolks
2 tsp. tabasco sauce
1 Tbls. Dijon mustard
1 tsp. Worcestershire sauce
30 ml. lemon juice, fresh
200 g. parmesian cheese
25 g. freshly chopped parsley
salt and pepper to taste
1 lt. olive oil

 

Whisk egg yolks slowly add lemon juice, garlic, vinegar, and very finely chopped anchovies. Once mixed, add olive oil a little at a time. Whisk while adding. Now add parmesian cheese in small amounts. Add mustard, sauces, pepper, and salt.
