Argentine Beef Salad
200gms schnitzel
6 large button mushrooms
1 small green capsicum
300gms green beans
2 spring onions
Greek black olives

Dressing:
1/4 cup white wine
3/4 cup olive oil
juice of 1 lemon
2 tsp. mild mustard
pepper
salt
100gms sour cream

 

Cut schnitzel into strips, season with salt and pepper and fry quickly til cooked. Put in fridge to cool.

Top and tail beans, cut in half and blanch in boiling water for 2-3 mins. You can use frozen beans if you wish.

Wash and cut mushrooms into quarters, slice capsicum and onion. Combine everything with the dressing.

Dressing:
Blend all ingredients together.
