West country Chicken
A chicken dish with Onion, Mushroom and Tomatoes
6 free-range chicken breast or thighs
8 thin slices smoked bacon
2 tbsp olive oil.
2 cloves garlic, peeled and sliced
1 Pack of button mushrooms
3 Tomatoes cut into quarters
1 Red Chilli de-seeded and finely chopped
12 baby Onion cut in half
8 floz dry sherry 2 chicken stock cubes
225g can chopped tomatoes with herbs


1. Blend together one chicken stock cube and a little olive oil to form a paste ,Make diagonal cuts across the chicken breast or thighs and rub all over with the paste.

2. Heat pan over a medium heat brown the chicken to seal and cook for 5 minutes then remove from heat and place in a ovenproof dish. Add the bacon to the pan cook for 2-3 minute in the juices from the chicken remove and cut into large strips then add the onions to soften then add to oven dish as well.

3. Add the tomatoes, chilli, mushroom and sherry to the pan and bring to boil Simmer for 5 minutes poor over the chicken, lift chicken to top of dish so that it sit over the vegetables and cook in oven for 25-30 minutes.

4. Serve on it own or with fresh crusty bread & a green salad.
