Pineapple Chicken Drumsticks -Indonesian
Indonesian Pineapple Chicken Drumsticks
8 chicken drumsticks
1 small pineapple
2 Tbls. peanut oil
1 onion, chopped
1 clove garlic, crushed
1 tsp. grated ginger
2 small red chillies, cut into thin rounds
1/2 cup coconut milk
1/2 cup water


1. Remove and discard skin and fat from the drumsticks
2. Peel and core pineapple, cut into 2 cm cubes.
3. Heat oil in frying pan, add chicken, onion and fry until it turns brown in colour.
4. Add pineapple, ginger, garlic, and red chili and fry for one minute.
5. Pour in coconut milk and water, bring to boil, cover, simmer and stir occasionally until the chicken is tender.

Ready to serve!
