Goldschlager Chicken
3-4 Tbls. goldschlager
2 Tbls. butter or margarine
4 boneless skinless chicken breasts
6 marachino cherries, with stem removed
6 cups pineapple juice and pineapple chunks, if desired

 

In a medium to large pan, melt butter and add chicken. Cook in butter only for a few minutes.

Add pineapple juice, goldschlager, cherries and pineapple chunks (if desired). Bring to a boil. Cover and reduce heat to medium. Let simmer for about an hour and a half.

Serve over rice or even noodles, however, I prefer rice.
