Coconut and Lime Curry
Creamy Chicken Curry for Everyone!
4-5 fillets of chicken
2 cloves garlic
1 medium onion
1 fresh lime
1 15oz. tin coconut milk
1-2 dessert spoons mango chutney
1-2 dessert spoons of medium curry paste
1/2 pint single cream or 'light' cream


Chop onion and garlic. Fry in a little oil. Dice Chicken portions and add to pan, fry until browned. Add curry paste and fry for 3 minutes. Sprinkle lime juice into pan and add mango chutney. Add coconut milk, turn down heat and simmer for 20 minutes, add cream, simmer for further 15 minutes. Thicken with a little cornflour. Serve on a bed of rice.
