Chicken Fricassee
Low-Fat Main Dish
1 lb skinless, boneless chicken breasts, cut into strips
1 cup sliced onions
1 cup sliced mushrooms
1 sliced pepper (red, yellow, etc)
1 1/2 cups defatted chicken broth
1 tsp. lemon juice
1/2 tsp. dried thyme
1/4 tsp. salt (optional)
1/2 cup skim milk (using non-fat, non-dairy creamer is also good)
1 Tbls. flour
3 Tbls. sherry


Spray skillet with non-stick cooking spray. Over medium heat, stir-fry chicken with onions, mushrooms and peppers until lightly browned, add all but the last three ingredients. Cover and simmer for 10 minutes. While that is simmering, shake milk and flour in a covered container (to prevent lumps). Stir into chicken mixture with the sherry, bring to a boil stirring constantly until thickened. A delicious low fat meal.
