Carrie's Chicken Veggie Meatloaf
Healthy and Delicious
2 lbs. ground chicken
2 eggs
2 1/2 cups italian bread crumbs
3/4 cup ketchup
pepper to taste
dried parsley to taste
garlic powder to taste
1 small zucchini chopped
1 small summer squash chopped
1 medium onion chopped
1 pkg. sliced mushrooms
1 small green pepper, chopped
1 small red pepper, chopped
1 can artichoke hearts, drained, chopped


Preheat oven to 350 degrees F.

Use a 9x13 inch pan or larger (deeper), do not spray.

In a large bowl combine all the ingredients and mix together with your hands.

Place mixture in the pan and bake for approximately 45 minutes to 1 hour, or until the chicken is cooked through.

Some of the vegetables can still be a little crunchy.

Serve with baked potato, homemade macaroni and cheese, or mashed potatoes and a salad.

You can also choose to only use 1 lb. of ground chicken, and all of the ingredients become proportionate to the amount of chicken.

This also makes for great leftover meatloaf sandwiches for lunch.
