Roast Pork-Caribbean style
Melt in Your Mouth Pork!
Pork Belly with ribs and skin
Dry Jerk Seasoning or Cajun Seasoning
Coarse Salt

Dipping sauce: light soya sauce, hot sauce, and ketchup mixed together.

 

Wash pork belly, pat dry with paper towel.

With a sharp knife, cut skin 1/4 inch deep diagonally, criss cross angle.

Rub the dry rub seasoning genourously all over the pork, filling in the cuts to the skin.
Let this marinate overnight in the fridge.

Set oven at 400 degrees F., fill the cuts with the coarse salt.

With skin side up, bake for 1 hr at 400 degrees (if skin in turning brown too soon, place foil over skin do not seal).

After 1 hour, turn heat down to 320 degrees and let it bake for 2 to 3 hours depending on the size of the pork you are using.(2 pound cut, 3 hours total cooking time).

The meat should be tender and melt in your mouth when done, the fat will tenderize the meat. Let it sit uncovered for 15 minutes before cutting.

To serve, cut into small pieces, the skin will be crackle perfect, keep meat covered while cooking lightly with foil.

Serve with a mixture of light soya sauce and hot sauce. Ketchup can be added to this dipping sauce.
