Vegetable Tomato Pasta
Yummy tomato based pasta with some veggies
1. Pasta – 200 g
2. Tomatoes – 3 chopped in half inch cube
3. Onions – 1 chopped in half inch pieces
4. Garlic – 5 cloves chopped
5. Sweet corn kernels – 25 g
6. Capsicum – 2 diced in half inch pieces
7. Broccoli – 25 g diced
8. Tomato puree – small pack
9. Olive oil – 2 tablespoons
10. Salt
11. Italian seasoning
12. Black pepper
13. Tomato ketchup
14. Cheese


Preparing pasta-
1. Boil 1.5 liter water in a pan
2. Add 2 teaspoon salt
3. Add few drops of olive oil
4. Add pasta kernels and cook for 10 minutes stirring occasionally
5. When pasta is tender, strain the water and rinse with cold water twice
6. Set the pasta aside to cool

Preparing the veggies-
1. Heat one tablespoon olive oil in a pan
2. Add garlic cloves and stir till golden
3. Add onions and stir till golden
4. Add capsicum and stir for 1 minute
5. Add broccoli and cover the veggies for 2 minutes and let it simmer
6. Add sweet corn kernels to the veggies
7. Add 1.5 teaspoons of salt
8. Take the pan off the flame and cover it

Preparing pasta sauce
1. Heat half tablespoon olive oil in a pan
2. Add garlic cloves and stir till golden
3. Add diced tomatoes and let it turn tender
4. Add tomato puree to the pan and let it simmer for 2 minutes
5. Add freshly ground Italian seasoning , little bit of salt and black pepper powder
6. Let it simmer for 30 seconds

Final touches-
1. Add the tender pasta to cooked veggies in the pan
2. Turn on the flame and stir
3. Add prepared pasta sauce one tablespoon at a time and stir
4. Slowly add all the pasta sauce to the pan
5. Stir a little more
6. Turn off the flame
7. Add a little tomato ketchup
8. Sprinkle a little Italian seasoning and mix
9. Serve after adding a little melted cheese on top
