Summer Pasta
200g short pasta (eg. penne)
1 Tbls. olive oil
1 large red pepper, sliced
1 medium onion, sliced
100g bacon, chopped
2 cloves of garlic, finely chopped
2 large ripe tomatoes
1 Tbls. basil leaves, roughly chopped
1 Tbls. parsley, roughly chopped
salt and pepper, to taste
grated Parmesan, to taste


Fry the red pepper in the oil until it begins to soften.

Add the onion and bacon and cook until they begin to brown.

Add the garlic, fry for a minute, then add the tomatoes. Cook for 2-3 minutes.

Meanwhile cook the pasta in lots of salted water.

Drain the pasta, add to the other ingredients and put in the herbs, salt and pepper.

Serve with Parmesan over the top and more olive oil if you like.
