Shrimp Rotini & Vegetables
Quick, easy and healthy. Good low sodium dish.
Rotini Pasta
Uncooked Shrimp (4-6 if jumbo, but around 10 otherwise)
1 Red Onion (chopped, but not fine)
Garlic (minced)
Olive Oil
Half of a Lemon
Tomato (chopped)
1 cup vegetable broth
Feta (crumbled)
Seasonings (I chose thyme and pepper)


First start the pasta in a pot of boiling water. The rest of the preparation will take you just about as long as the pasta takes to cook.

Heat the olive oil on medium-low heat, add the garlic and chopped red onions and cook until tender.

Add the vegetable broth, shrimp, tomato and juice from the lemon. Stir together and cover to simmer for 8-10 mins or until you see that the shrimp is cooked through. Check to see if your pasta is ready. Now go back and add any seasonings to the shrimp and vegetables if you like. Pasta should be done now.

Combine all ingredients together and finally mix in the crumbled feta and serve.
