Egg Noodles
My Mom's Homemade Egg Noodles
6 eggs
3 Tbsp. oil
6 Tbsp. milk
3/4 tsp. salt
3/4 tsp. baking powder
4 1/2 cups flour

 

Put eggs and other liquids in bowl. Whip; add dry ingredients. Blend and knead. Roll and use with noodle cutter or can be hand cut by using a knife. Let noodles completely dry. Package and freeze or use some immediately.

NOTES : From my Mom, Sarah, these noodles are easy to make, and really delicious with lots of egg flavor. She used her hand-crank type pasta cutter to make these, and I've done the same. It makes a big batch, but they freeze very well. To dry, we always laid them out all over the dining room table (table covered with a big plastic tablecloth) overnight and then packaged the next morning. Package in individual freezer bags, pop in the freezer, and they are ready to use when you want delicious homemade noodles.
