Cornish Game Hen with Citrus Sausage Stuffing
2 Cornish Game Hens
1 orange, peeled
1/4 cup raisins
2 large sweet sausages, skins removed
1 tsp. fresh garlic (minced)
1/4 tsp. pumpkin pie spice
dash salt/pepper


Preheat oven to 450 degrees F.

In skillet, add sausage, garlic, raisins, pumpkin pie spice, salt, and pepper. Cook on medium heat, mixing constantly until sausage is cooked and crumbled in texture.

Crush orange and allow juice to enter skillet. Then add 1/2 of pulp from orange. Cook one more minute. Remove all contents from heat and refrigerate to cool.

Wash hens under cool water and remove any innards. Discard.
When stuffing is cooled to room temperature, stuff hens with sausage/orange mixture. Rub skins of hens with any juices left from stuffing.

Place in oven and drop temperature to 350 degrees F. Roast for 1 hour 45 minutes or until top is a dark golden brown.

Serve within 4 minutes.

Recipe is for 2 hens.
