Winter Fruit Salad
1 20oz. can pineapple chunks, in natural juice, drained and juice reserved
1 3 1/2oz. pkg. cook and serve vanilla pudding
1 qt. mixed fruit chunks (such as apples, bananas, cherries, and grapes)
3/4 cup chopped pecans
1/3 cup flaked coconut,optional
whipped topping, optional


In a saucepan, combine reserved pineapple juice, and pudding mix. Cook over medium heat until thickened. Cool.

Toss with pineapple chunks, fruit chunks, nuts, and coconut.
Chill until ready to serve.

Garnish each serving with a dollop of whipped topping, if desired.
