Traditional Holiday Spice Cake,Brides cake
moist ,egglless,min ingredient spice cake
1lb raisins,3 cups water,2 cups sugar,1 tbsp butter,2tbsp ground cinnamon,1 tsp allspice,3 1/2 cup flour.1 good size tablespoon of baking soda.
Optional; Fruit and peel,Rum,Sour cream frosting,Nuts.White raisins or Currants can substitute raisins


1.Put all ingredients except flour in heavy pot to heat on stove.bring to boil mixing constantly with a long wooden spoon.Boil 2-3 min until thickens to a egg-white like consistency.set aside to cool to warm or room temp.
2.mix in the flour and baking soda using same spoon.
3. Grease&flour 2 loaf pans or one large 10 inch spring cake pan.
4.Bake 350'1hr dont under or over cook.until toothpick test comes out dry.
Notes;This is a moist egg-less cake.if you add a sour cream frosting it would be similar to a brides can be cut thin,wrapped and stored too.
One of my favorites.
You can also add Rum,fruit and peel mix to batter to make it a holiday fruit cake.
