Microwave Brownies
150g butter
200g sugar
1 1/2 teaspoon vanilla extract
1/2 teaspoon salt
1/2 teaspoon coffee
3 eggs
150g plain flour
80g unsweetened cocoa powder
1 1/2 teaspoon baking powder
100g chopped almonds
50g chocolate chips


1. Melt the butter for about 40 seconds. Add the sugar, vanilla, salt and coffee and mix well.

2. Whisk in the eggs one by one and mix well.

3. Add the flour, cocoa and baking powder and mix well.

4. Add in the chopped almonds and mix well.

5. Grease a microwave safe dish with butter and pour in the brownie mixture. Sprinkle chocolate chips on top.

6. Cook for 6 minutes. Use a knife to check for wet crumbs. Let rest for 10 minutes. Transfer out of dish and cut into pieces before serving.
