Welsh Cakes (Cookies)
Traditional Cake (cookie) from Wales
Mix the following ingredients together and sieve-
6 cups flour
2 cups sugar
1 tsp. salt
1 tsp. nutmeg
6 tsp. baking powder

Then mix these together-
3/4 lb Crisco (12 Tbsp)
3 eggs, beaten
1 tsp. lemon extract
1 cup currants (NOT Raisins)
1 cup milk


 

Mix everything together gradually. Roll out 1/4 inch thick.
Cut with glass or welsh cookie cutter.
Bake on griddle, preheated to 350-375 degrees ungreased.
Bake each side til brown or when inside of cookie is done.
Top each finished cookie with a sprinkle of granulated sugar.
Stack in piles of 6, with two piles side by side and wrap in waxed paper.
These cookies freeze really well.
These cookies can be served cold or placed in a toaster oven to be heated up.
