Scots Secret Shortbread
Authentic Scottish Shortbread
1 cup flour
1/4 cup sweet rice flour (Mochiko works best) OR if necessary use corn starch
1 stick butter
1/4 cup fine cane sugar

 

The secret to the best Scots Shortbread recipe is the addition of rice flour, but be careful not to buy the wrong kind. Sweet rice flour like Mochiko or the French 'Blue Star' brand gives shortbread a fabulous almost almond-like flavor and meltaway texture. People will want to know where you got this recipe!

Sift the dry ingredients and work in the butter until the mix becomes a soft pliable dough.

Form the shortbread into a round or press it into a greased round cake pan or mold; prick the dough with a fork to let it expand while cooking, but make a decorative pattern with the holes or simply keep them diagonal.

Bake the round at 350 degrees F. for 45 minutes to an hour, or until lightly golden.
