Spanish Rice
4-5 slices bacon
1 med. onion chopped
1/2 green pepper chopped
1 6oz. can tomato paste
1 8oz. can tomato sauce
1/2 tsp. oregano
1 1/2 tsp. parsley
salt and pepper to taste.
2 cups water
2 3/4 cups Minute Rice


Fry bacon till crisp, drain on paper towel and set aside. Save bacon fat in pan (for less cholesterol dump bacon fat and substitute olive oil).

Saute onions and green pepper till done.

Add rest of ingredients except rice and simmer 20-30 minutes.

Remove from heat and add the
rice and crumble in the bacon.

Cover and let sit fot 10 minutes.

I like to have this dish served with some good cottage cheese. great combo.
