Salsa Enchiladas
Fast, Easy, and Everyones Favorite!
1 large jar salsa
1-1/2 cup cottage cheese
2 cups shredded cheddar cheese
1 can olives
few chopped green onions
8 flour tortillas


In 13x9x2 baking dish,pour small amount of salsa on botton of dish.

In bowl mix,cottage cheese, 1 cup cheddar cheese, green onions, and olives.

Take about 1/4 cup of mixture and place insida a tortilla.

Roll up and place seam side down in dish.

Finish all the rest the same.

Pour the rest of salsa over the top of enchiladas.

Add remaining cheese on top of enchiladas.

Bake at 375, covered for 20-25 minutes.

Serve with nice green salad.
