Healthy Meatloaf Recipe
1.5 pounds lean ground beef
1 egg
1 chopped onion
1 cup low fat milk
1 cup whole wheat bread crumbs
1 tablespoon brown sugar
2 tablespoons prepared mustard
1/3 cup ketchup
1/2 cup fresh parsley chopped
1 grated carrot
Salt and pepper to taste

 

Preheat oven to 175 degrees C (347 degrees F).
Lightly grease suitable long pan
Combine beef, milk, onion, egg, breadcrumbs, parsley and carrot in large mixing bowl. Season as required.
Spread mixture evening in loaf pan.
Mix brown sugar, mustard and ketchup in small bowl. Once thoroughly mixed pour over meatloaf.
Bake approximately 1 hour or until no longer pink in centre.
Serves 8.
Approx. 270 calories per serve.
