Full Meal Zucchini Casserole
6 med. sliced zucchini
1 lb. lean ground beef
1 med. diced onion
1 Tbsp. garlic puree, or 1 tsp. garlic powder(whatever you prefer)
1 Tbsp. dried oregano
1 can cream of mushroom soup
pepper to taste
1 cup long grain Minute rice
1 8 oz. carton cottage cheese
1 cup grated cheddar cheese
1 lg. sliced tomato
1/4 cup grated Parmesan cheese


In 9x13 pyrex baking dish, place sliced, raw, unpeeled zucchini. Meanwhile, in skillet, brown ground beef, onion, garlic, and pepper. When browned, add oregano and cream of mushroom soup. Cook till well mixed. Pour meat mixture over zucchini, then layer uncooked rice, next cottage cheese, and finally cheddar cheese. Cover and cook 45 min at 350F. Finally, remove cover, add sliced tomatoes and top with Parmesan cheese. Bake for an additional 10-15 mintues. Serve with Italian salad and garlic bread.
